Good Monday to you all! And how could it not be good with this delicious Kiwi Chia Pudding Parfait that I bring you this week, which is not only yummy and filling, but oh-so-pretty, too!

Yes, the breakfast obsession continues… I promise I will bring you something non-breakfasty next week 🙂

Chia Pudding Parfait

So, I am a morning person. I don’t like going to bed late (unless there’s a good reason 😀 ) and then waking up late in the morning. I feel like I am wasting half of my day if I get up any later than 7 or 8 o’clock (yes, “thanks”, family genes…) But the fact that I am a morning person doesn’t automatically mean I jump out of bed at 6 o’clock no problem.

I have already tried and tested on myself that my day starts much better if I get up early and don’t have to rush. I can take my time to sit on my terrace and watch the sunrise, have a cup of tea, do some yoga, meditate and of course, a great long walk with my dogs. But sometimes I need a little bit more of an incentive to get from under the covers and a great breakfast is something that never fails. It needs to be delicious, it needs to be healthy and last, but not least, it needs to be pretty 🙂 And this Kiwi Chia Pudding Parfait is all three of the above.

I’ve already talked about the goodness that is Chia Pudding in this post, and since it is so incredibly versatile, I have brought you another yummy version today.

This Kiwi Chia Pudding is made with puréed kiwi fruit and avocado (healthy fats and lots of vitamin C amongst other things) and thickened with ground flax seeds and chia seeds. I have also added some bee pollen, but feel free to omit this if you’d like your chia pudding vegan. I have then layered it with yoghurt and topped with kiwi slices and blueberries. Some delicious Chocolate Coconut Granola on top for added crunch and we’re good to go 🙂

Another great thing is that this breakfast can be prepared and layered (except for the granola, which could become soggy) the night before and waiting for you when you wake up. A sprinkle of granola on top and you’re ready to rock. Prepare in a mason jar and you have yourself a great portable breakfast or snack.

Kiwi Chia Pudding
  1. 3 kiwi fruits, peeled
  2. 1 avocado, peeled
  3. 1/2 cup water
  4. 2 tablespoons chia seeds
  5. 1 tablespoon flax seeds
  6. 1 teaspoon bee pollen
Parfait
  1. Greek yoghurt
  2. kiwi slices
  3. blueberries
  4. Chocolate Coconut Granola
Instructions
  1. Blend the kiwi, avocado and water until uniform. Mix with chia & flax seeds and bee pollen and let sit in the fridge for at least 30 mins.
  2. Layer with some Greek yoghurt, top with kiwi slices and blueberries, sprinkle with Chocolate Coconut Granola and enjoy.
Notes
