So, I’m all about breakfasts lately! Since finishing my Reboot Month, I’ve been making chia puddings and overnight oats and granolas like they’re going out of fashion 🙂

And the granolas, mmmhhhh… For years I’ve been seeing recipes on all the blogs I read and always thought: “No, that must be really complicated and time-consuming”, so I never tried. Until a couple of weeks ago when I thought, let’s give it a go. And boy, am I happy I did!!! It couldn’t be easier! Not to talk about so much healthier and more delicious than anything you can buy in a shop pre-made.

Chocolate Coconut Granola

Depending on the flavour/combination you make, it will take you between 3 – 10 minutes to mix everything up in a bowl. Then all you need to do is extend it on a large baking sheet and pop into the oven for 20 – 30 minutes. Whilst you’re waiting, you can do a quick yoga session, kick back with a good book or dance around your living room a little, all the while inhaling the amazing smells coming from the oven…

Chocolate Coconut Granola

You can make your batch over the weekend and have a whole week of delicious and healthy breakfasts prepared. No nasties and no sickeningly sweet flavour unlike the shop-bought cereal mixes. Have it with milk, over yoghurt with some fruit, as a topping on your chia pudding or whichever other way occurs to you.

The granola is best stored in a glass jar, at room temperature for up to a week or in the freezer up to a month – not that it will actually last a month 😀

The first one I made is an insanely delicious Chocolate Coconut Granola which I adapted from this yummy looking Skinny Dark Chocolate Chia Granola. Chocolatey raw cacao, maple syrup, coconut flakes – a winning combination! And it only has 5 ingredients, so it’s super-quick, super-healthy and super-duper delicious. And feels like eating dessert for breakfast. Which every breakfast should feel like, if you ask me.

In reality, I made this granola in the middle of my Clean Month, which means I couldn’t eat any (other than tasting a tiny bit to test it) and I have managed to keep it in the freezer and not touch it until the 1st September! That’s strength right there 😀

Actually, correction… I have managed to keep the SECOND batch in the freezer and not touch it until 1st September. The first batch was fresh out of the oven and cooling down on my counter when some friends came over, started nibbling “to test it” and then proceeded to eat the whole tray for dessert after dinner 😀 I would call that a seal of approval! So the second batch went into the oven so I could take photos of it for the blog.

Having this in the freezer motivated me to keep going towards the end of August and I was looking forward to it immensely. Also, I have found it to be an excellent motivation for waking up early 🙂 In the summer I normally struggle a little bit as the light long evenings mean I end up going to bed really late and am then having problems getting up early. But knowing that this granola was waiting for me? No problemo 🙂 I was out of bed within seconds.

And you can’t really beat watching the sunrise from your terrace with a bowl of Chocolate Coconut Granola deliciousness in front of you and a steaming cup of tea in your hands. The best possible start to the day!

Serves 4

Ingredients
  1. 2 cups oats
  2. 1/4 cup maple syrup
  3. 3 tablespoons coconut oil
  4. 1/4 cup raw cacao
  5. 1/2 cup coconut flakes
Instructions
  1. Preheat the oven to 200ºC.
  2. Mix all the ingredients in a bowl and extend on a large baking sheet.
  3. Bake at 200ºC for 30 minutes or so, stirring half-way through so the granola doesn't burn.
  4. Once done, let cool at room temperature and then transfer to a glass jar. It will keep at room temperature for a week or in the freezer for up to a month (not that it will last that long though 🙂
