The summer is in full swing here in Spain and that means that I crave smoothies that are colder and frostier, lighter and fresher. No nut butters or chocolate, I much more prefer fruit and vegetable smoothies that are for the most part just water, such as pineapple, watermelon or cucumber-based ones.
It is so easy to just throw a handful of ingredients into the blender – and magically turn them into a smoothie full of goodness, hydration and nutrition at the press of a button. Most of the time they turn out really good, sometimes they turn out SPECTACULAR and once in a while they turn out un-drinkable 😀 Well, you dust yourself off and carry on!
This Pineapple Mojito Smoothie came to my mind last week out of the blue and is of the spectacular variety. As soon as I took the first sip, I was in love with it. It is cool and delicious, not too sweet and very refreshing. It is also very easy and quick to prepare and with only 5 ingredients (where one is ice, so basically just 4), it is the simplest summer treat.
So if where you are is hot and sweltering and you need cooling down – go and make yourself one of these bad boys 🙂
Thanks to the addition of ice cubes, it is already nice and cold, but if you want it even frostier, freeze the pineapple cubes a few hours beforehand. This must be one of the most delicious ways to stay hydrated in the summer 🙂
- 2 cups pineapple, peeled and chopped
- 1/2 cup coconut water
- 1/2 small lemon, peeled and de-seeded
- 2 - 3 ice cubes
- a few mint leaves (I used about 6 - 7)
- Whizz all the ingredients in the blender until smooth and uniform.
- Enjoy!
- Makes 1 large smoothie or 2 small.
- If you'd like an even frostier smoothie, you can freeze the pineapple cubes for a couple of hours before blending them.
